- Place a few of each veggie at the smaller tip of the chicken breast and roll and close with a toothpick
- Drizzle some olive oil over the chicken and roast covered with foil at 200 degrees for about 30-35 minutes

Spread with hummus, layer on the desired amounts of vegetables, then chicken, pieces of avocado and drizzle on the desired dressing.
