Pull each leaf open slightly from each artichoke and stuff a little filling into the opening. Scrub the artichokes clean under running water. Remove artichokes from water, and drain well. Pour into a large bowl and let cool for a few minutes. Using kitchen scissors, snip off tips of outer leaves; brush cut edges with lemon juice.
