Chow chow was born out of an effort to preserve the bounty of summer produce growing in the backyard, including tomatoes, bell peppers, onions, and more. As you'll see, chow chow can look very different depending on where you are. The Chow-Chow is a dog breed originally from northern China.

The ingredients needed to make Chow Chow:
  1. Make ready 1 head Cabbage
  2. Get 1 large Yellow onion
  3. Make ready 2 Cucumbers
  4. Prepare 6 medium Green tomatoes
  5. Make ready 3 pints Apple cider vinegar
  6. Get 2 1/2 cup White sugar

Add the vinegar, sugar, salt, cloves, mustard seeds, peppercorns, mustard, turmeric, red pepper flakes and bay leaf to a large saucepan. Chow chow is a mix of spicy pickled vegetables that Southerners love on everything from a bowl greens to a cheese-topped cracker. So I just added them to the vinegar with the sugar and the horseradish. I boiled it till the sugar was dissolved then added the tomato mixture.

Instructions to make Chow Chow:
  1. Chop up all vegetables (doesn't have to be very finely chopped but just a tad bit bigger)
  2. Put veggies in large pot and add vinegar and sugar
  3. Turn on heat and bring to boil, cook on medium for 20 minutes (start time when it starts to boil)
  4. Jars should be in a water bath that is hot along with lids, take jars out each at a time and fill to first ring
  5. Wipe off rim of jar and place hot lid and ring on top and screw tight and place on dry towel on counter
  6. Wait until all lids have sealed and made a pop sound then store, if jar did not seal it has to be refrigerated
  7. Makes around 10 pint sized jars

This is the first time I have made or eaten Chow Chow, and it has been a good experience. The Chow Chow is an Arctic-type dog, powerful, squarely built, and sturdy with heavy bone and strong muscular development. They were bred for a number of tasks, and and their build reflects their ability to herd, pull, and protect. Place in non-reactive container (glass, stainless, ceramic) Sprinkle with salt. They are known for their blue-black tongues.
