Bottle Gourd Recipes: Bottle gourd is known as Lauki and Calabash. It is widely used in Indian cooking. You can make varieties of recipes using Lauki like pulao, dudhi halwa, and Lauki kofta curry. Cut the bottle gourd into pieces and keep aside.

Instructions to make Bottle Gourd Rice:
  1. Heat a pressure cooker with oil and ghee and temper with whole spices.
  2. Add onion and red chilli. sauté until it becomes very soft.
  3. Add ginger garlic paste and sauté until raw smell goes.
  4. Add coriander leaves and mint leaves. Sauté for few mins. Add tomato and sauté until it becomes soft. Add red chilli powder and salt.
  5. Add bottle gourd and sauté for few mins. Add water and mix it well. Add rice and finally add few lemon drops. Close the lid and pressure cook for 2 whistles.
  6. Serve with any raita.

Now add fennel powder, chopped green chilies, bottle gourd, mint leaves, milk and cook with closed lid. Rice looks great,innovative idea,never thought of adding bottle gourd to rice. Add diced bottle gourd and then add soaked rice & Bengal gram little by little enabling to smash the bottle gourd, ginger & red chillies & grind them along with rice. Finally add the soaked black gram into the grinder.
