  6. Divide batter in popover cuos and bake 20 minutes. After 20 minutes reduce oven temperature to 350 without opening oven door and cook 20 more minutes, serve hot with butter or jam
  7. Remember not to open the oven door early, I peeked with this batch and they did deflate a bit but we're still hollow and steaming inside

But butter isn't a bad stand-in, and popovers are pretty easy. You can buy special popover pans, with deeper, narrower cups which force the tops up in a more pronounced. The deeper your baking cups, the higher your popovers will rise. The popovers hold up surprisingly well; reheat just before serving. You may need to make these in batches.
